Seems to be hard to get hold of flour at the moment so here’s our Executive Chef, Mark’s favourite flourless chocolate cake recipe! Why not try it at home?
For the Flourless Chocolate Cake recipe
You will need:
- 1 large cake tin
- 240g yolks
- 2 vanilla pods
- 360g egg whites
- 360g sugar
- 120g cocoa powder
- 120g ground almonds
Method:
Whisk yolks and vanilla to stiff point, whisk egg whites till soft peak and gradually add the sugar till shiny and stiff then fold in the ground almonds and cocoa powder to both mixes pour in to cake tin and cook at 170° 20 mins.
For the Chocolate and Orange Creameaux
You will need:
- 350g Double Cream
- 90g Yolk
- 45g Sugar
- 120g Dark chocolate (chopped)
- 1 Orange Zest
Method:
Bring the cream to the boil, mix the yolks with the sugar and pour the cream. Cook on a low heat stirring continuously until the mixture coats the back of a spoon and pour onto the chopped chocolate and Orange zest. Mix with a wooden spoon and allow chilling.
